Barbecued Lobster Tails with a Garlic and Parsley Marinade
“Now we’re talking BARBECUE!”
Ingredients:
6 Lobster Tails, prepared with veins removed
6 tablespoons of extra virgin Olive Oil
3 tablespoons White Wine Vinegar
4 large cloves of Garlic, crushed
a handful of Parsley leaves, finely chopped
freshly grated Rock Salt and Black Pepper
Method:
- Mix together the oil, vinegar, garlic and parsley in a bowl.
- Season well with salt and pepper.
- Apply to marinade with a brush to the lobster meat and then chill in the refrigerator.
- Repeat the process after 30 minutes.
- Chill for at least an hour, more time is better if you have it.
- Cook the lobster tails either directly on the barbecue or wrapped in foil, which will seal in the flavour.
- Enjoy your Barbecued Lobster Tails with an array of salads. The garlic and parsley marinade lends itself to potatoes, couscous and pasta, producing a delightful dish which will awaken your tastebuds with delight.
