Rack of Ribs with Bourbon Glaze

Unique Recipe Rack of Ribs with Bourbon Glaze by Elle Smith Inspired By Elle Creativity in the Kitchen

 

Ingredients:

1.5kg or 3 lbs of Beef Fore ribs

1 large bottle of Mineral Water, for cooking

1 small Carrot, chopped into cubes

1 small Onion, chopped finely

1 stick of Celery, finely chopped into cubes

1 teaspoon of Black and White Peppercorns

3 fresh Bay Leaves

1 handful of flat-leaved Parsley, remove the stalks

 

Bourbon Glaze

175g or 6 oz Tomato Ketchup, good quality like Heinz

150g or 5 oz Chipotle Chilli Ketchup

110ml or 4 fl oz Dark Soy Sauce

175g or 6 oz clear and runny Honey

4 tablespoons Teriyaki Sauce

4 tablespoons of Bourbon Whiskey, like Jack Daniels

freshly grated Rock Salt and Black Pepper, to taste

a dash of Worcestershire Sauce

 

Method:

  1. Place the ribs in a large, deep saucepan.
  2. Add the water, peppercorns, bay leaves, flat leaf parsley, carrot and onion.
  3. Cover and bring the pan to the boil.
  4. Reduce heat and then simmer for 1.5 hours, stirring intermittently.
  5. Preheat the oven to 200C, 400F or Gas Mark 6.
  6. In a separate saucepan, mix together all the ingredients for the bourbon glaze.
  7. Simmer whilst stirring fir two minutes, then remove from heat.
  8. Drain the ribs from their cooking brine, and then place in roasting tin.
  9. Coat the ribs liberally with the bourbon glaze, using a brush.
  10. Bake for about ten minutes, then turn and coat again with the glaze before returning to the oven for another ten minutes.
  11. Finally, add one last coating of glaze and cook for 5 minutes before serving with salad and potato dishes.
